Great food starts with honest, carefully farmed ingredients. At Fennel & Clove, we work closely with farmers and producers who hold the same standards of quality, provenance, and sustainability that we do. Their partnership importantly shapes every part of our menu.

Fresh Ideas, Smaller Footprint

At Fennel & Clove, we’re committed to sourcing from local suppliers we know and trust. Through thoughtful ordering and delivery planning, we minimise excess transport, arranging for same-day fresh produce to be delivered directly to our venue whenever possible. This keeps road miles low, strengthens our sustainability efforts, and ensures our carefully selected, home-grown ingredients arrive at their very freshest.

THREE HILLS BARN

Cheese & Gelato 

Torpenhow Cheese Company- Founded in 2019, Torpenhow Farm in the Lake District transforms rich, organic milk from their Jersey–Friesian herd into exceptional handmade cheeses. Each batch reflects the changing seasons, giving every cheese its own distinctive flavour and character—a true expression of the farm. These cheeses have become firm favourites on our sharing boards and feature throughout our accompanying sauces.

  • Darling Howe (Brie) – Light, creamy, buttery, nutty with citrus; soft white rind.
  • Binsey Red – Sweet, nutty, long-lasting; pairs with chutneys, pickles, spicy foods.
  • Trusmadoor – Crumbly yet creamy; delicate citrus tang; like Cumbrian/Lancashire cheese.
  • Oak Smoked Cheddar – Full-flavored with gentle oak smoke; pairs with apples, grapes, pears.
  • The Monarch (Blue) – Creamy, tangy, full-flavored; balances Roquefort sharpness.
  • Park House Cheddar – Creamy, medium-sharp, long-lasting; versatile for boards or cooking.

Three Hills Gelato –100% natural Cumbrian gelato, made with organic, pasture-fed milk from Torpenhow Farmhouse Dairy. Matthew trained at the Carpigiani Gelato University in Bologna, uses traditional methods to craft rich, intense flavours with irresistibly creamy textures, served alongside our dessert selections.

YEW TREE FARM CUMBRIA – Herdwick LAMB

Yew Tree Farm – Once owned by Beatrix Potter, Yew Tree Farm is a 700-acre hill farm in the Yewdale Valley, where Herdwick sheep and Belted Galloway cattle graze freely on herb-rich pastures. Specialising in Herdwick hogget, mutton, and Belted Galloway beef, the farm is known for exceptional flavour and sustainable practices. At Fennel & Clove, we feature their Herdwick lamb across our main plates and platters, prized for its tenderness and distinctive taste.

TWEED TROTTERS – PORK 

Ethical and Sustainable. Tweed Trotters – Tweed Trotters produces ethical, sustainable Oxford Sandy & Black pork on their high-welfare farm near Peebles in the Scottish Borders. These gentle, inquisitive pigs with their distinctive ginger coats and black spots live freely in the woodlands, foraging and exploring as pigs naturally should. Their calm, natural lifestyle results in pork of outstanding quality, prized for its juiciness and rich flavour. We’re proud to feature it across the menus we create for venues throughout Southern Scotland.

BASECAMP NORTH LAKES – BEEF & POULTRY 

Their mission is to champion sustainable rural enterprise, backing eco-friendly local suppliers and putting people and planet first. They deliver a positive, sustainable visitor experience, support an ethical workplace, and partner with Alpacaly Ever After CIC to care for alpacas and llamas across the Lake District. At Basecamp North Lakes they showcase award-winning, grass-fed Cumbrian beef, ethically sourced, locally raised, and expertly prepared by our master butcher, Sean. We serve venues along this route and proudly use their beef and poultry when working in Cumbria, delivering true farm-to-fork flavour.

BALANCE OF NATURE BOTANICALS – Fruit – Vegetables – Edible Flowers – Herbs – Leaves  

Found throughout our menus, their botanicals bring colour, texture, and life to every dish, from delicate edible flowers that add bursts of brightness to leafy, layered salads that offer depth and crunch. Each element is grown with care, nurtured in rich soil and thriving polytunnels where flavour develops naturally. Their salads are cut to order, gathered at peak freshness, and carried straight from the farm to our kitchen. The result is produce that feels alive on the plate, vibrant, fragrant, and full of the earthy character only truly fresh, carefully farmed ingredients can offer.

Corstane Farm

CORSTANE LAMB — PREMIUM BELTEX WITH REAL, HONEST CHARACTER
Raised on the family farm in the heart of the Borders, Corstane Beltex lamb carries the true taste of the hills, fine-grained, naturally marbled, and full of deep, wholesome flavour.
Their lambs grow slowly on open grassland, roaming the same fields their family has tended for generations. This simple, natural way of farming brings out the best of the Beltex breed and delivers a rich, authentic taste you can trust. We’ve trusted Andrew Dunlop’s Corstane lamb for many years: top quality, full of flavour, and always delivered on time. We use his lamb with a harissa rub for the BBQ, and our overnight lamb shoulder remains one of the most popular picks when working in Southern Scotland.
